One-Pot Chicken and Rice

Description

Ingredients

1 ½ cups jasmine or basmati rice

2 tablespoons olive oil

1 pound boneless chicken thighs, cubed

1 small onion, diced

4 garlic cloves, minced

1 teaspoon paprika

½ teaspoon turmeric

1 cup mixed frozen vegetables

3 cups chicken or vegetable broth

Salt and pepper to taste

Fresh cilantro or parsley for garnish


Instructions

Heat oil in a large pot over medium heat.

Add diced onions and garlic; sauté until golden (about 5 minutes).

Add chicken and cook until browned (6–8 minutes).

Stir in rice, paprika, and turmeric; cook for 2 minutes to enhance flavor.

Pour in broth and mix in vegetables. Bring to a boil, then reduce to simmer and cover.

Cook covered for 20–25 minutes, until rice is tender and liquid absorbed.

Fluff rice gently, garnish with chopped cilantro or parsley, and serve.

Notes

Swap chicken for tofu or turkey for variation.

Use brown rice for added fiber—add 10 minutes to cook time.
