Description
A delicious and versatile rice salad featuring a mix of fresh vegetables and a zesty dressing.
Ingredients
2 cups cooked basmati rice
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup red onion, finely chopped
1/2 cup bell peppers, diced
1 cup grilled chicken, diced
1/4 cup black olives, sliced
1/4 cup fresh herbs, chopped
Juice of 1 lemon
Salt and pepper to taste
Instructions
Cook the rice according to package instructions and let cool.
While rice is cooling, chop vegetables and herbs.
In a large bowl, combine the rice, vegetables, olives, and chicken.
Add lemon juice, season with salt and pepper, and toss to combine.
