Description
A fresh, southern-inspired salad blending juicy peaches with peppery arugula and toasted pecans.
Ingredients
4 cups arugula
2 ripe peaches, sliced
1/2 cup toasted pecans
1/4 cup crumbled feta cheese
3 tablespoons olive oil
1 tablespoon balsamic vinegar
Salt and pepper to taste
Instructions
Wash and dry arugula leaves.
Slice peaches and toast pecans briefly in a pan.
Layer in a bowl: first, arugula, then peaches, and sprinkle with pecans and feta.
Mix olive oil, balsamic vinegar, salt, and pepper for dressing.
Toss salad gently with dressing and serve immediately.
Notes
Use firm but ripe peaches for best flavor.
If arugula is unavailable, substitute with baby spinach.
