Ingredients
8 oz rotini pasta
1 cup cherry tomatoes, halved
1 cucumber, thinly sliced
1 red bell pepper, diced
1 cup leafy greens
1/2 cup shredded mozzarella or crumbled feta
1/4 cup red onion, thinly sliced
1/4 cup olives, sliced
2 tablespoons fresh basil, chopped
Salt and pepper, to taste
Dressing of your choice
Instructions
Cook the pasta as per the package instructions.
Chop all the vegetables to uniform sizes.
Combine pasta, veggies, cheese, and olives in a large bowl.
Toss with dressing and let chill before serving.
