2 cups mixed greens
1 cup cherry tomatoes, halved
1 cucumber, diced
1 avocado, cubed
Instructions
In a large pot over medium heat, gently warm the vegetable broth until simmering.
Stir in the mixed greens and halved cherry tomatoes, allowing them to simmer for five minutes until the greens tenderize.
Toss in the diced cucumber and continue to simmer.
