Ingredients
Brownie Base:
1 cup granulated sugar
1/3 cup unsweetened cocoa powder
1/2 cup melted butter
2 eggs
1/2 tsp salt
1/2 tsp baking powder
Cookie Dough Topping:
1/2 cup unsalted butter, softened
1/2 cup packed brown sugar
1 cup flour, heat-treated
1 tbsp milk or dairy-free substitute
1/2 cup mini chocolate chips
Instructions
1. Preheat your oven to 350°F and grease an 8×8” baking pan.
2. In a bowl, mix sugar, cocoa powder, and melted butter until glossy and smooth.
3. Add eggs one at a time, stirring well after each.
4. Incorporate salt and baking powder. Mix until just combined without overmixing.
5. Spread batter evenly in pan and bake for 25 minutes, or until center is set.
6. Allow brownie base to cool completely — at least 30 minutes.
7. For the topping, cream the softened butter, brown sugar, and milk until fluffy.
8. Fold in heat-treated flour and chocolate chips gently.
9. Spread cookie dough evenly over the cooled brownie base using an offset spatula.
10. Chill the assembled brownies for at least 15 minutes before slicing and serving.
Notes
Brownies can be baked and cooled the day before. Assemble with cookie dough topping the next day.
For a flavor twist, swirl raspberry jam or Nutella between brownie and dough layers.
Vegan/dairy-free and gluten-free substitutions work well in this recipe.
