Easy-to-make Mediterranean hummus cups packed with crunchy veggies and creamy feta, perfect as a 20-minute cold appetizer or make-ahead party bite.
Ingredients
1 cup classic hummus
1/2 cup diced cherry tomatoes
1/4 cup diced cucumbers
2 tbsp chopped parsley
1/4 cup crumbled feta
2 tbsp olive oil
1 pinch smoked paprika
8 mini phyllo shells or scooped cucumber cups
Optional: pomegranate molasses or hot honey drizzle
Instructions
Chop tomatoes, cucumbers, and herbs.
Prepare the phyllo shells or slice cucumbers into 1-inch bites and scoop centers.
Place 1 tbsp of hummus into each cup.
Top with chopped vegetables and crumbled feta.
Drizzle with olive oil and sprinkle paprika.
Add optional drizzle of pomegranate molasses or hot honey before serving.
