Ingredients
2 cups cooked white rice
1.5 cups shredded cooked chicken
1 cup chopped broccoli (steamed or frozen)
1 can (10.5 oz) cream of mushroom soup or dairy-free alternative
1.5 cups shredded cheddar cheese
1/2 tsp salt
1/4 tsp paprika
1/4 tsp black pepper
1/2 cup crushed crackers or panko breadcrumbs
Instructions
Preheat oven to 375°F.
Grease a 9×13 inch baking dish with olive oil spray.
In a large bowl, mix rice, chicken, broccoli, soup, cheese, and seasonings.
Spread mixture evenly into the baking dish.
Top with crushed crackers or breadcrumbs.
Bake uncovered for 35–40 minutes until golden and bubbly.
Let rest 5 minutes before serving.
Notes
