Description
A quick and flavorful one-pot rice dish infused with lime, fresh cilantro, and hearty black beans—perfect as a side or main course.
Ingredients
1 cup white basmati rice, rinsed
2 cups vegetable broth
1 large lime, zested and juiced
1/2 cup chopped fresh cilantro
1 cup canned black beans, drained
1/2 teaspoon cumin
Salt to taste
Instructions
Rinse rice under cold water until water runs mostly clear.
In a pot, toast the rice in 1 tsp oil for 2–3 minutes to enhance flavor.
Add vegetable broth, cumin, and salt. Bring to a boil, then cover and simmer for 17–20 minutes.
Remove from heat and let it sit covered for 5 minutes.
Fluff the rice and stir in lime zest, juice, black beans, and cilantro.
Serve hot or refrigerate for later use in bowls and wraps.
Notes
Use chicken broth instead of vegetable broth for a carnivore option.
Add chili flakes or jalapeño for a spicier finish.
Can substitute white rice with jasmine or brown rice—adjust liquid and time accordingly.
