Ingredients
500g boneless chicken, cubed
1 bell pepper, chopped into chunks
1 zucchini, sliced thickly
10 cherry tomatoes
2 tablespoons olive oil
2 garlic cloves, minced
Salt and pepper to taste
Fresh lemon juice or zest
Instructions
Soak wooden skewers in water.
Mix olive oil, minced garlic, salt, pepper, and lemon juice in a bowl.
Coat chicken and vegetables in marinade.
Thread onto skewers alternately.
Grill on medium heat, turning occasionally, until chicken is cooked and vegetables are tender.
Notes
Soaking wooden skewers prevents burning.
