Description
A tender, flavorful beef roast slow-cooked with garlic, spices, and broth that melts in your mouth. Perfect for busy weeknights or special Sunday dinners.
Ingredients
3 lbs beef chuck roast
1 onion, sliced
4 garlic cloves, minced
2 cups low-sodium beef broth
2 tbsp tomato paste
1 tbsp olive oil
1 tbsp Worcestershire sauce
2 tsp smoked paprika
1 tsp dried oregano
1 tsp black pepper
Salt to taste
1 cup chopped carrots (optional)
Instructions
Heat oil in a skillet and sear beef on all sides.
Transfer beef to the slow cooker.
Add garlic, onion, and tomato paste to the skillet. Stir for 30 seconds.
Pour in beef broth, Worcestershire sauce, and stir in spices.
Transfer the mixture over the beef in the slow cooker.
Cook on low for 8–9 hours or high for 4–5 hours.
Remove beef, shred or slice it, and return to the sauce.
Serve hot with sides like potatoes or rice.
Notes
Chuck roast is ideal, but brisket or boneless short ribs also work.
For deeper flavor, add a splash of beef demi-glace at the end.
Avoid opening the lid while cooking.
