Description
A cozy, moist spice cake infused with warm spices and a nostalgic Southern twist. Perfect for fall gatherings or a comforting dessert any time.
Ingredients
2 cups all-purpose flour
1½ cups dark brown sugar
3 large eggs
1 cup vegetable oil
1 cup buttermilk
1 tbsp cinnamon
1 tsp nutmeg
1 tsp allspice
1 tsp cloves
2 tsp baking soda
½ tsp salt
Optional: ½ cup applesauce or mashed banana
Optional: golden raisins or chopped pecans (floured before folding)
Instructions
1. Preheat oven to 350°F. Grease and line a 9″x13″ pan.
2. In a bowl, whisk together flour, baking soda, salt, and spices.
3. In another bowl, beat eggs and sugar until fluffy. Mix in oil and buttermilk.
4. Combine wet and dry ingredients gently. Do not overmix.
5. Fold in optional raisins or nuts.
6. Pour batter into prepared pan.
7. Bake for 45 minutes or until toothpick comes out clean.
8. Cool for 30 minutes before frosting or slicing.
Notes
Try a pinch of cayenne for a kick.
Maple cream cheese frosting pairs beautifully.
For dairy-free version, use coconut milk and olive oil.
Pairs well with spiced chai or coffee.
