Ingredients
2 cups all-purpose flour
1 tsp baking soda
½ tsp salt
2 tsp cinnamon
1 tsp ground ginger
¼ tsp allspice
¼ tsp cloves
¾ cup dark brown sugar
½ cup unsalted butter (softened)
¼ cup molasses
1 large egg
Turbinado sugar (for rolling)
Instructions
1. Preheat oven to 350°F. Line two baking sheets with parchment.
2. Cream softened butter and brown sugar until fluffy.
3. Mix in the egg and molasses.
4. In a separate bowl, whisk flour, baking soda, salt, cinnamon, ginger, allspice, and cloves.
5. Gradually fold dry ingredients into wet mixture.
6. Roll dough into 1” balls and coat with turbinado sugar.
7. Place 2” apart on baking sheet.
8. Bake for 11 minutes or until tops crack and shine.
9. Cool on pan for 5 minutes, then transfer to rack.
Notes
Optional: Chill dough for 20 minutes or overnight for enhanced chewiness.
Substitute maple syrup for molasses for a lighter twist.
