Ingredients
Scale
2 cups fresh spinach, chopped
2 cups all-purpose flour
2 tablespoons olive oil
1 teaspoon salt
2 large eggs
1/2 cup grated Parmesan cheese (optional)
A pinch of nutmeg
Instructions
Blanch spinach in boiling water for 2 minutes, then puree.
Mix flour, salt, spinach puree, olive oil, and eggs to form dough.
Knead on floured surface for 8 minutes until smooth.
Roll dough and cut into shapes. Boil for 4 minutes.
Drain and serve with olive oil and Parmesan.
Notes
Store in air-tight container for up to 2 days.
Reheat with splash of water to retain moisture.
