Description
A simple, flavorful chicken and broccoli stir fry with bell peppers and a soy-garlic-ginger sauce. Quick to make and endlessly customizable.
Ingredients
2 cups broccoli florets
1 red bell pepper, sliced
1/2 onion, sliced thin
2 garlic cloves, minced
1-inch fresh ginger, minced
1 lb boneless chicken thighs, thinly sliced
3 tbsp low sodium soy sauce
1 tbsp sesame oil
Instructions
Heat sesame oil in a wok over medium-high heat.
Add chicken and cook until browned, 5–6 minutes. Remove from pan.
Add onions, garlic, and ginger; stir 1 minute.
Add broccoli and bell peppers; stir fry 4 minutes.
Return chicken to pan and add soy sauce; toss well to combine.
Serve hot over rice or noodles.
Notes
Sub tofu or chickpeas for a vegetarian option.
Use day-old rice for making stir-fried rice variations.
