Ingredients
2 cups fresh strawberries, hulled and sliced
1/2 cup sugar
1 teaspoon vanilla extract
2 tablespoons cornstarch
1 tablespoon fresh lemon juice
1/4 cup water
1 package puff pastry sheets
Instructions
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Combine sugar, cornstarch, lemon juice, and water in a saucepan. Heat until thickened.
Add strawberries and vanilla extract. Stir gently.
Roll out puff pastry, cut into squares, and place a spoonful of filling on each.
Fold pastries into triangles, seal edges, and bake for 25 minutes.
