Description
Moist, flavorful strawberry muffins made with fresh or frozen strawberries. Perfect for breakfast, snack, or dessert.
Ingredients
1 ½ cups all-purpose flour
½ tsp baking soda
½ tsp baking powder
¼ tsp salt
½ cup cane sugar
⅓ cup neutral oil
½ cup dairy-free yogurt or sour cream
1 egg
1 tsp alcohol-free vanilla extract
1 ¼ cups diced strawberries (fresh or thawed frozen)
Instructions
Preheat oven to 350°F and line muffin tray with liners.
Mix flour, baking soda, baking powder, and salt in a bowl.
In a separate bowl, whisk together sugar, oil, yogurt, egg, and vanilla.
Combine dry and wet ingredients until just mixed.
Fold in strawberries lightly.
Fill muffin cups ¾ of the way.
Bake for 22–25 minutes or until golden and springy.
Cool 5 minutes in tray, then move to rack.
Notes
Use paper towels to dry strawberries before folding in.
Rest batter for 10 minutes before baking for fluffier texture.
