A refreshing, sweet soup made from fresh strawberries and Greek yogurt.
Ingredients

2 cups fresh strawberries, hulled
1 cup Greek yogurt
2 tablespoons honey
1 teaspoon vanilla extract
Fresh mint, chopped for garnish
Instructions
Blend the strawberries until pureed smooth.
In a bowl, whisk the Greek yogurt and honey until combined.
Gradually add the strawberry puree to the yogurt mixture, ensuring it’s well incorporated.
Stir in vanilla extract.
Chill in the fridge for 20 minutes.
Serve garnished with freshly chopped mint.
Notes
Agave syrup can replace honey.
For a tropical twist, use coconut yogurt.
