Ingredients
6 cups dry stuffing mix or cubed bread
1 cup diced onion
1 cup diced celery
2 tablespoons butter
2 eggs, beaten
1¾ cups chicken broth
Salt, pepper, herbs (sage, thyme) to taste
Instructions
1. Preheat oven to 375°F. Grease a muffin tin with butter or spray.
2. In a medium skillet, melt butter over medium heat. Sauté onion and celery until translucent—about 7 minutes.
3. In a large bowl, combine the sautéed vegetables, bread cubes, and seasonings.
4. In a separate bowl, whisk eggs into the broth. Pour over the bread mixture and stir until fully moistened but not soggy.
5. Use a large spoon or scoop to pack the mixture into muffin cups. Firmly press down to form compact muffins.
6. Bake for 28–30 minutes, or until muffin tops are crispy and golden.
7. Let cool for 5 minutes before removing. Serve warm with a side of sausage gravy or homemade biscuits.
Notes
Customize with sausage, mushrooms, apples, or cheese for creative flair.
Use vegetable broth for a vegetarian version.
