Description
This no-bake icebox cake features layers of whipped cream, strawberries, and graham crackers—perfect for summer, light and refreshing.
Ingredients
2 lbs fresh strawberries, sliced
3 cups heavy whipping cream or coconut cream
1/3 cup cane sugar or maple syrup
2 tsp alcohol-free vanilla extract
2 sleeves graham crackers
Zest of 1 lemon
Pinch of sea salt
Instructions
Use a hand mixer to beat cream, lemon zest, vanilla, and sugar to stiff peaks.
Lay graham crackers in a rectangle dish as base layer.
Spread whipped cream over crackers evenly.
Add sliced strawberries on top.
Repeat layers until ingredients run out, finishing with strawberries.
Cover dish and chill for 4+ hours or overnight.
Slice squares before serving—garnish with mint or extra fruit if desired.
Notes
Use dairy-free coconut cream for a vegan version.
Best served cold, ideal after overnight chilling.
