Ingredients
4 large sweet potatoes
1/2 cup brown sugar
1/2 cup whole milk
1/4 cup unsalted butter
1 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp salt
1 cup mini marshmallows
Instructions
1. Preheat oven to 375°F and grease a medium casserole dish.
2. Peel and dice sweet potatoes. Roast at 400°F or boil until tender.
3. Mash potatoes with brown sugar, milk, butter, vanilla, salt, and cinnamon.
4. Spread mixture evenly into casserole dish.
5. Top with mini marshmallows.
6. Bake for 40–45 minutes until golden and bubbling.
7. Let cool slightly before serving.
