Ingredients
1 1/2 cups crushed graham crackers
1/2 cup unsalted butter, melted
2 tablespoons brown sugar
1 1/2 cups mashed sweet potato
16 oz cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon vanilla extract
1/4 cup chopped pecans or chocolate chips (optional)
Whipped topping (optional)
Instructions
Preheat the oven to 350°F.
Mix crushed graham crackers, melted butter, and brown sugar; press into lined 9×9 pan.
Bake crust for 10 minutes and set aside.
In a separate bowl, blend cream cheese until smooth. Add sweet potato, sugar, eggs, vanilla, cinnamon, and nutmeg; beat until creamy.
Pour filling over crust and smooth the top.
Sprinkle with optional toppings.
Bake for 35 minutes until set.
Cool for 30 minutes, then chill in fridge before slicing into bars.
Top with whipped cream before serving.
