Ingredients
1 block firm tofu (about 12 oz)
4 cups mixed greens (arugula, spinach, or romaine)
1 cup cherry tomatoes, halved
1 cucumber, sliced
1 bell pepper, diced
1 cup carrots, julienned
1/4 cup red onion, thinly sliced
1/4 cup fresh herbs (basil or parsley), chopped
1/4 cup nuts or seeds (slivered almonds or sunflower seeds)
1/4 cup balsamic vinaigrette
Instructions
Drain and press the tofu to remove excess water. Dice into bite-sized cubes.
In a large bowl, toss together the mixed greens, cherry tomatoes, cucumber, bell pepper, carrots, and red onion.
Add the cubed tofu to the vegetable mix. Gently toss to combine.
Drizzle your chosen dressing over the salad, ensuring even coverage. Toss again lightly.
Sprinkle the fresh herbs, nuts, or seeds, and any additional toppings.
Plate the salad and enjoy immediately.
Notes
Use organic tofu for the best flavor.
