Ingredients
400g firm tofu, cubed
4 cups vegetable broth
2 cloves garlic, minced
1-inch piece ginger, sliced
2 tbsp soy sauce
1 tbsp sesame oil
1 carrot, sliced
3 green onions, chopped
2 cups spinach leaves
1 tbsp miso paste
Instructions
Press the tofu to remove excess moisture and cut it into small cubes. Slice the carrots and chop the green onions.
Heat sesame oil in a medium-sized pot over medium heat. Add garlic and ginger, sautéing until fragrant.
Pour in the vegetable broth and bring it to a gentle boil. Stir in soy sauce and miso paste until dissolved.
Add carrots, spinach, and tofu cubes to the pot. Simmer for 10–15 minutes.
Sprinkle green onions over the soup before serving. Enjoy!
