A simple, delicious Tomato Pasta recipe with ripe tomatoes and flavorful spices.
Ingredients
400g spaghetti
500g ripe tomatoes
3 garlic cloves, minced
1 tablespoon olive oil
Pinch of red pepper flakes
Fresh basil leaves
Grated Parmesan cheese
Salt and freshly ground black pepper
Instructions
Boil water and make an ‘X’ on each tomato’s bottom. Submerge them for 30 seconds and peel once cooled.
Boil spaghetti until al dente, according to package instructions. Reserve some pasta water for later use.
Heat olive oil in a pan, adding minced garlic and red pepper flakes. Cook for one minute.
Add peeled tomatoes, salt, and pepper to the pan and simmer for 15 minutes. Blend for a smoother texture.
Add cooked spaghetti to the sauce and mix well. Use reserved pasta water if needed.
Garnish with basil leaves and Parmesan before serving hot.
Notes
Use nutritional yeast as a Parmesan substitute for a vegan option.
Enhance with grilled chicken or seasoned roasted vegetables.
