Ingredients

1 lb ground turkey

1 white onion, diced

2 cloves garlic, minced

2 tbsp chili powder

1 tsp cumin

1 can fire-roasted tomatoes (15 oz)

1 can kidney beans (15 oz), rinsed and drained

1 can black beans (15 oz), rinsed and drained

2 cups chicken broth

Optional toppings: sour cream, avocado, cheddar cheese, scallions


Instructions

1. In a large pot, heat oil over medium heat and cook diced onions until translucent (about 5 minutes).

2. Add garlic and cook for 1 more minute.

3. Add ground turkey and cook until no pink remains.

4. Stir in chili powder, cumin, and salt. Mix well to coat the turkey.

5. Add tomatoes, beans, and broth. Bring to a simmer.

6. Reduce heat, cover, and simmer for 30–45 minutes, stirring occasionally.

7. Adjust seasoning and serve hot with toppings of choice.

Notes

You can use shredded leftover turkey instead of ground.
