Description

Ingredients

2 ½ cups all-purpose flour

2 ½ tsp baking powder

½ tsp salt

½ cup neutral oil

¼ cup unsweetened applesauce

1 ¾ cups sugar

4 large eggs

1 tbsp alcohol-free vanilla flavor

1 cup non-dairy milk (almond or oat)


Instructions

Preheat oven to 350°F. Grease and line two 9-inch cake pans.

In a bowl, whisk flour, baking powder, and salt.

In another bowl, beat sugar, oil, and applesauce until smooth.

Add eggs one at a time and beat until light.

Stir in alcohol-free vanilla flavor.

Alternate adding dry ingredients and milk in batches.

Divide batter into pans and tap to remove air bubbles.

Bake for 40–45 minutes or until toothpick comes out clean.

Cool in pans for 10 minutes, then on a rack.

Notes

Use applesauce to retain moisture naturally.

Store cake in an airtight container with a slice of bread to maintain softness.

Wrap and freeze up to 3 months unfrosted.
