A quick and easy recipe for soft, chewy vanilla cookies made with alcohol-free vanilla bean paste.
Ingredients
2 ¼ cups all-purpose flour
½ tsp baking soda
½ tsp baking powder
¼ tsp salt
¾ cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 tbsp vanilla bean paste or alcohol-free vanilla extract
2 tbsp milk
Instructions
Preheat oven to 350°F and line baking sheets with parchment paper.
Cream softened butter and sugar until light and fluffy.
Beat in egg and vanilla paste until combined.
In a new bowl, whisk flour, baking soda, baking powder, and salt.
Gradually combine dry ingredients into the wet, adding milk as needed.
Scoop dough into tablespoon-sized balls and place on sheet 2 inches apart.
Bake for 10–12 minutes or until edges are golden.
Cool 5 minutes on tray, then move to wire rack.
Notes
For extra chewiness, add 1 tsp cornstarch with dry ingredients.
Dough freezes well for up to 3 months.
Do not overbake—cookies continue to set after removed from oven.
