Ingredients
Baby kale or arugula
Pear slices
Crumbled goat cheese
Toasted walnuts
Roasted Brussels sprouts or butternut squash
Quinoa (cooked)
Dried cranberries or pomegranate arils
Maple mustard or tahini lemon vinaigrette
Instructions
1. Wash and dry greens thoroughly.
2. Slice pears or fruits and toss in lemon juice.
3. Roast vegetables and let them cool.
4. Toss greens with vinaigrette in a large bowl.
5. Add fruits, nuts, cheese, grains and gently mix.
6. Top with herbs or pomegranate for garnish.
Notes
Swap pears with apples or persimmons.
Use feta or blue cheese instead of goat cheese.
