A quick and tasty roasted zucchini recipe with garlic, olive oil, and parmesan cheese for a satisfying veggie side dish.
Ingredients
4 medium zucchini, quartered lengthwise
2 tablespoons olive oil
3 cloves garlic, minced
Salt and black pepper to taste
1 teaspoon Italian seasoning
1/2 teaspoon red pepper flakes (optional)
1/2 cup shredded parmesan cheese
Fresh basil or parsley for garnish
Instructions
Preheat the oven to 425°F.
Trim and quarter zucchini lengthwise.
Toss zucchini with olive oil, garlic, seasonings, and half the parmesan.
Place cut-side up on parchment-lined baking sheet.
Top with remaining cheese.
Roast 18 minutes or until fork-tender and golden.
Garnish with basil or parsley and serve hot.
Notes
Use fresh parmesan for best flavor.
Optional red pepper flakes add a kick.
Great with grilled protein or grain bowls.
