A delicious and quick zucchini soup that blends rich flavors with wholesome ingredients.
Ingredients
3 medium zucchinis, chopped
1 onion, finely diced
2 cloves garlic, minced
3 cups vegetable broth
½ cup coconut milk
Salt and pepper to taste
2 tablespoons olive oil
Instructions
Heat olive oil in a pot over medium heat and sauté onion and garlic.
Add zucchini, stirring until slightly soft for 5 minutes.
Pour in vegetable broth, season with salt and pepper, and simmer for 15 minutes.
Blend the soup with coconut milk until smooth, then return to pot to warm through.
Adjust seasoning before serving.
Notes
Chili flakes can be added for heat.
