Description

Soft, earthy-sweet matcha cupcakes that combine traditional baking with vibrant matcha flavor. Perfect for brunch, afternoon tea, or anytime desserts.


Ingredients

1 cup all-purpose flour

2 tsp matcha powder

3/4 cup granulated sugar

1/2 cup almond milk

1/4 cup neutral cooking oil

1 tsp alcohol-free vanilla extract

1 tsp baking powder

Pinch of salt


Instructions

Preheat oven to 350°F. Line muffin tray with cupcake liners.

In a bowl, whisk flour, matcha, salt, and baking powder.

In another bowl, mix sugar, almond milk, oil, and vanilla.

Add dry mix into wet mix and stir until just combined.

Divide batter evenly into liners. Fill to 3/4 full.

Bake for 18–20 minutes or until toothpick comes out clean.

Cool 10 min in pan, then transfer to rack to cool completely.

Frost with cream cheese or coconut buttercream as desired.

Notes

Use ceremonial or culinary-grade matcha for best taste.

Swirl in citrus zest or white chocolate chips for variation.

Store frosted cupcakes in refrigerator up to 4 days or frozen up to 3 months.
